Guests love to explore! Think about some of the amazing events you've experienced -- exploration and discovery are important elements to ensure engagement. In 2018, couples are looking for uniqueness in the presentation. We are hearing from many brides who want to explore innovative dessert stations, self-service gourmet pretzel stations, and signature cocktail stations to excite and engage their guests in the experience of their special occasion. All of these ideas are so fun and memorable. To ensure that your stations are well received, always make sure unstaffed stations are well appointed and have explicit instructions for the guests. Outdoor stations can be decorated with hand chalked instructions on mini chalk boards (you can even use a white paint pen to ensure it sticks!) For a staffed station, make sure there is a backstory. This will make the experience more unique and unexpected. If you are doing a gourmet pretzel station, why pretzels? Does the smell remind you of a special moment in your relationship? Expressing this story through a professional wait staff will allow for ultimate engagement of a unique wedding catering station.

Craft is where it's at! Specialty cocktails are an exceptional way to elevate the experience. Since we are based in New Orleans, we LOVE to go back to the classics. A morning brunch with the famed Ramos Gin Fizz or the cocktail hour featuring a spiced Sazerac would really set the stage. Again, we go back to the advice of thinking about the theme. If you are going for a 20's glam vibe you'll want to make sure the cocktails are very much aligned with the Prohibition era. We absolutely recommend getting a copy of the Meechams Bartender's Manual. Specialty cocktail manuals, like this one, give exceptional classic recipes and some equally powerful variations that could be a STAR at your next occasion.
We also LOVE the idea of featuring a bubble bar that allows guests to dress up their champagne, prosecco, sparkling cider, etc. Including bowls of fresh fruits and floral cocktail sprays and syrups can take this trend to the next level.
